Rich winter stew with seasonal vegetables

A tasty warming rich stew made from seasonal winter vegetables

It may seem as though winter heralds a ton of very similar, slightly boring veg, but as the days get colder, using that veg in lovely warming winter stews is a seasonal delight.

Stephanie Hafferty explains a tasty treat in the form of this rich winter stew, using all sorts of seasonal vegetables.

Ingredients

  • 1 medium celeriac grated
  • 2 medium or 1 large parsnip diced
  • 3 onions sliced
  • 2 good-sized leeks
  • 6 carrots
  • 1 bunch of chard
  • ½ medium white cabbage (red is delicious too)
  • 1 red chilli as hot as you like
  • ½ medium squash peeled and diced, I use ‘Uchiki Kuri’
  • 4 cloves garlic
  • 4 teacups dried beans rehydrated
  • 1tbsp vegetable oil
  • Vegetable stock (or boiling water) adjust quantities as necessary
  • Salt and pepper to taste
  • Chopped parsley

Methods

  • Step 1

    Chop and slice the vegetables.

  • Step 2

    Sauté the onions and leeks in the oil until soft.

  • Step 3

    Add the rest of the vegetables and beans with as much water or stock as you need.

  • Step 4

    Simmer for 30 to 40 minutes, stirring occasionally and adding more liquid if necessary during the cooking until the beans are soft.

  • Step 5

    Taste, season accordingly and serve with chopped parsley.
